Moroccan Candy Potato & Chickpea Tacos

Say adios to guacamole and refried beans as a result of we’re spicing issues up with these scrumptious Moroccan-inspired tacos. We packed every tortilla with caramelized cubes of candy potato, crunchy spiced chickpeas, spinach, contemporary tomatoes and a zesty lime yogurt. To seize the wealthy flavors of Morocco, the candy potato and chickpeas are tossed in a mix of cinnamon, immune-boosting ginger, paprika, cumin and turmeric, which is a strong anti-inflammatory. Though vegetarian, the chunks of candy potatoes and protein-rich chickpeas are substantial sufficient to fulfill even the hungriest of carnivores.

Moroccan Candy Potato & Chickpea Tacos

The Skinny

Per 1-taco serving:

  • 205 energy

Serves 4

Prep time: 15 minutes
Cook dinner time: 30 minutes


half teaspoon turmeric
3/Four teaspoon cinnamon
half teaspoon ginger
half teaspoon garlic powder
1 teaspoon cumin
1 teaspoon paprika
pinch of salt
1 half tablespoons olive oil
Four gluten free tortillas
2 candy potato, peeled and lower into small cubes
1 can chickpeas
1 cup spinach, washed and roughly chopped
1/Four cup fats free Greek Yogurt
1 lime
half cup diced tomatoes
1/Four cup chopped cilantro


  • Preheat the oven to 450°F.
  • In a bowl whisk collectively the turmeric, cinnamon, ginger, garlic powder, cumin, half teaspoon paprika, salt and olive oil
  • Place the cubed candy potato and chickpeas on a baking sheet. Pour the oil and spice combination over them and toss till effectively coated. Bake for 20 minutes within the oven, flipping the candy potatoes half approach via to make sure they’re evenly cooked. Take away from the oven as soon as the chickpeas are crisp and the candy potatoes are calmly browned and caramelized.
